I thought about doubling it in my first attempt tonight, but there was no need.
It would be more than enough for 3, and was certainly more than enough for the two of us.
Just for info - it re-heated very well in the microwave a couple of hours later when wanted to finish it.
Am gonna try it with rasins in it tomorrow, and cover it with thick cream when it is ready!

    MMMMM PUDDING

Can feel my butt getting wider by the minute....

I never tried any pudding like that before. My family gobbled it all up in one go while it was still hot. How is it cold?

Got this off a cooking website

What is a good substitute for eggs?

    • 2 tbsp cornstarch = 1 egg
    • 2 tbsp arrowroot flour = 1 egg
    • 2 tbsp potato starch = 1 egg
    • 1 heaping tbsp soy powder + 2 tbsp water = 1 egg
    • 1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
    • 1 banana = 1 egg in cakes.
    • 1 tbsp milled flax seed and 3 tbsp water = 1 egg. Light, fluffy cakes!

Thanks, but I'd be amazed if any of that gives a sponge-like finish - there's no raising element. But a kind thought.

Are you allergic to ALL kinds of eggs or just chicken eggs?

I'm intolerant of albumen... I haven't yet dared experiment with duck eggs to see if there's any difference, but one day when I've nothing else to do, and nowhere to go...
